How should I disable head tracking?

Go to the 'Home' page and disable the 'Head Tracking' feature. You can also Restore Default settings by clicking the button next to the Settings title. This button allows users to restore all Gamepack settings to their default state, including headset, camera, and any other choices made in the Settings menu.
